Everyday Gourmet: “Let food be thy medicine.”-Hippocrates

I have a confession to make: I love going grocery shopping. It’s true.

It’s one of things I look forward to doing every week and I thoroughly enjoy every moment of it. For me, a grocery store/market is a place of potential. There are a plethora of ingredients you can choose from and combine to create delicious and nutritious meals.

Over the past couple of years, Hippocrates’ famous quote has really become a guiding principle in the food I choose to buy, where I shop, and the companies I support.

This week, I encourage and invite you and I to view grocery shopping, meal planning, cooking, and eating as an investment (vs. a chore) to our health and ultimately our lives. Opportunity or Obligation, the choice is yours. The truth is, when we choose to see this daily/weekly act as an opportunity, it becomes a chance to show others (and ourselves) that we care and thus becomes an act of LOVE.

Lemongrassy Salmon and Kale Pasta
(note: omit the lemongrass and add 1tbsp of toasted sesame oil to make ‘ginger and sesame salmon pasta’)
1/2 lb of your favourite pasta shape
2 cloves of garlic minced
1 tsp of grated ginger
1/2 stack of lemongrass quartered and chopped
1 medium onion chopped
1 tbsp coconut oil
1 bunch of kale, washed and finely chopped
1 can of wild salmon (I use Golden Seal Wild Salmon which is sustainably fished and comes in a bpa free can)

Dressing
1/2 cup-1 cup of starchy cooking liquid
1/2 lime juiced
2 tbsp dark soya sauce
2 tbsp agave or honey
1 tbsp light soya sauce
1 tbsp your favourite chilli sauce
2 tsp dried basil
1 tsp ground black pepper

Boil water and add pasta.

Meanwhile in a large skillet, melt coconut oil on medium and add onions and lemongrass. Sautee until onions are translucent and fragrant. Add garlic and ginger and sautee for a minute. Add chopped kale and sautee until wilted. Add can of wild salmon and mix until heated through.

In a small bowl, make the dressing.

Once pasta is cooked till al dente, drain pasta and reserve one cup of the starchy cooking liquid. Return the pasta back to the pot along with the cooking liquid. Add in the kale and salmon mixture and drizzle the dressing. Combine the pasta, the kale and salmon mixture, and the dressing until everything is coated.

Served best warm.
