Beauty & Blessings: This Week in Photos

Hi Beautiful Souls,

Happy Weekend! Each week as I sit down to write my “Beauty & Blessings” post, I am always amazed and humbled as I reflect upon the days that have past. It’s amazing how one photo can say so much. They say “beauty is in the eyes of the beholder”…sometimes I think it is similar about life in general. Love..and life my friends, is in the heart of the beholder.

An ode to popcorn! I love popcorn, especially when I realized how easy it is to make and how tasty it is to eat! Each week I make a fresh batch and use various herbs and spices to add flavour and nutrition. Because corn is one of the most notorious genetically modified vegetables, I opt for using organic popcorn, which is now readily available in bags and/or bulk in supermarkets and health food stores. You can sometimes find a bag/container of organic popcorn at Homesense/Winners/Marshalls or Homegoods/T.J. Maxx/Marshalls.

On a recent trip to Cape Cod, I stocked up on organic popcorn kernels at Trader Joe’s where a 1 lb bag was $1.99! That is MANY weeks worth of popcorn treats.

In a large pot over medium heat, add 2-3 tbsps of organic unrefined coconut oil (I am currently using Nutiva).

Add 2-3 kernels into the pot and once they pop, add enough kernels to coat the bottom of the pot. Once they start popping, move the pot around to encourage the popping and decreasing the chance of burning. Lower the heat to minimum and continue shaking the pot until the popping stops.

Transfer to a bowl and add seasonings of your choice.

In the photo below, the top pan contains Molasses/Maple Caramel Corn and the bottom pan contains a batch of rosemary/nutritional yeast/himalayan sea salt (this one might be my new favourite!). The possibilities are truly endless. Pick up a bag and try it for yourself and let me know what flavour combinations you love! Black Out Poetry: This is an exercise that I encourage all of you to try. Grab a newspaper article or rip out a page in a magazine you are throwing away, get yourself a black marker and get “blacking out.” Black out any word that you feel doesn’t belong to reveal the hidden masterpiece within!

I love movies especially chick-flicks. Like the inspiring Robert Madu (if you’ve never heard this man speak, I highly encourage you to check him out. He is hilarious, high-energy, and inspiring), I believe that God speaks to me and teaches me through movies. I’m not sure if any of you remembered the lessons that came from Confessions of a Shopoholic”experience . Well in this lovely movie, we experience secondhand what it is like when our world is turned upside down in the most unexpected way. It reminds us that we can plan our lives to the nth degree but at the end of the day, but more often than not, our grand plans are trumped by God’s greater purpose for us. And to be completely honest, though it is not always easy, I would have it no other way. God is able to do “exceedingly, abundantly above and beyond anything we can think or imagine” (Ephesians 4:20)– the question is, are you and I available?
